Lettuce Tacos

Mexican food is a staple in our home. Most types can be made in great quantity, cheaply and are quick. One of our favorites is Paleo Tacos. Here is the Recipe:

1 head of romaine lettuce
1lb ground beef
1 Tbs. chili powder
1 tsp. ground cumin
1/2 tsp. ground chipotle
1 Tbs. minced onion
1 tsp. minced garlic
1 tsp. salt
Pepper to taste
Toppings of choice

Cook up ground beef and season with seasonings. Wash lettuce thoroughly and trim off the root end. Peel the leaves and use as taco shells. Fill with meat and what ever toppings you prefer. We like to top with ours with tomato, avocado, sour cream, cheese and Tapatio.

Foamy Carpet Cleaner Recipe

My carpet drives me crazy. It is difficult to keep clean, and when its dirty it looks gross!

After trying a MULTITUDE of recipes for various cleaners I have come up with one that works GREAT!!

Here it is:

3 cups water
3/4 cup Dr.Bonner's Liquid Castile Soap (I used the peppermint scented one)

Place ingredients into a blender and blend until foamy.

Apply the foam with a damp sponge and work into the carpet. Repeat until you have done about a 2x3 foot patch. Rinse your sponge in a bowl of warm water and work the spot again. Voila your carpet is clean!! This is excellent for pet stains!!

Pumped Up Peanut Butter

In our house we go through a ton of peanut butter. With 3 little ones who never seem to stop eating, its a fast and easy item to have on hand. With this in mind I decided to "Pump Up" our peanut butter. Here is how its done:


1 Jar of Peanut Butter (We use natural peanut butter from Costco)
1/4 cup Ground Golden Flax Seed
1/4 cup Chia Seeds

Combine all in the bowl of a food processor or blender. Blend until smooth, the chia seeds should still be whole! Spoon back into your jar and enjoy!

Viola you have pumped up your peanut butter!!
